Job Purpose/Objective of the Position:

Microalgae have gained attention as a sustainable and nutrient-rich protein source for plant-based foods, yet their application in structuring fibrous meat analogues remains underexplored. While soy protein is well-established in high-moisture extrusion (HME), there is limited knowledge of how microalgae proteins perform under similar processing conditions. This project aims to investigate the techno-functional properties of microalgae proteins, using soy as a benchmark, to determine their suitability for fibrous structure formation. By evaluating key parameters such as solubility, water-holding capacity, and gelation behaviour, the study will contribute to optimizing microalgae-based formulations for HME. The findings will provide insights into broadening the scope of alternative proteins for structured food applications, supporting the development of novel and sustainable protein sources.

 

Time commitment:

Minimum 16 hours per week for 3 months and/or full-time internship for a minimum of 3 months and up to 1 year. The internship starts from August 2025 onwards.

 

Job Responsibilities:

  • Characterize plant-based proteins by material characterization techniques.
  • Establish lab protocols and approaches and tools to characterize the structuring potential for plant-based proteins.
  • Learn how to operate a high moisture extruder.
  • Work on protein-based formulations for food processing applications.
  • Develop beneficial parameter settings for different formulations in the high moisture extruder.
  • Develop the understanding to analyse the structure and texture of plant-based proteins.
  • Correlate these measured characteristics with the structuring and texture-forming potential of various raw materials.

 

Job Requirements/Competencies:

  • Degrees in Food Science, Bio sciences, Bioengineering, Chemical Engineering or related studies.
  • General understanding of food processing techniques like high moisture extrusion is beneficial.
  • General understanding of structure – functionality relationships of food material.
  • Strong organizational skills complemented by meticulous attention to detail.
  • Understanding of lab safety protocols and standard operating procedures for the safe handling of chemicals.
  • Strong skills in English speaking and writing, problem-solving and communication.
