In this seminar, Prof. Brueck will present compelling examples of sustainable biotechnological processes specifically tailored for food applications. You will discover how his team has leveraged products from microalgae and oleaginous yeasts to revolutionize the food industry. One highlight includes a groundbreaking fermentation process that uses stale bread waste as a carbon source to produce microbial oil through the oleaginous yeast Cutaneotrichosporon oleaginous. He will also present his results of how  an area-efficient production method can be made with a remarkably favorable carbon footprint compared to commonly used vegetable oils.


These innovative approaches are essential in meeting the growing food demand of our world's population, especially in highly urbanised environments like Singapore.
